Greek Quinoa Salad

Ingredients

2 cups quinoa – dry

2 cucumbers

3 medium vine-ripened tomatoes

1 cup feta cheese

2 Tbsp olive oil

Juice of 1 lemon + 1/2 tsp lemon zest

2 tsp salt

2 tsp oregano

Optional: 1/2 cup black olives or red onions

Directions

  1. Prep quinoa according to directions

  2. Dice cucumbers, tomatoes and onions

  3. Whisk together olive oil, salt, oregano, lemon juice and zest to form dressing

  4. Stir together all ingredients
