Toasted Quinoa Energy Bites

These Toasted Quinoa Energy Bites serve as a protein and healthy fat-packed snack that’s fun to make and easy to eat on-the-go or for when you’re in a pinch.

Ingredients

1 cup quinoa

1 cup rolled oats

1/2 cup pepitas

1 cup chopped, roasted, unsalted almonds

6 chopped medjool dates

1 cup almond butter

1/4 cup raw honey

1 tsp cinnamon

Directions

  1. Rinse and strain quinoa

  2. Toast quinoa by adding it to a skillet over medium heat for 4-5 minutes, stirring frequently. Quinoa is done once the water is evaporated and begins to become aromatic

  3. Add oats to pan and toast for an additional 2-3 minutes, or until lightly golden

  4. In a large mixing bowl, combine toasted quinoa, toasted oats and all remaining ingredients, stirring until homogeneous mixture forms

  5. Mold and form into balls by hand using about 2-3 Tbsp of mixture for each bite
