Winter Salad

Winter produce may seem scarce, but we are making the most of it with this Winter Salad. This salad is full of vibrant colors and flavors to nourish you and your family even during the desolate winter months.

Ingredients

10 oz spring mix

½ cup goat cheese

5 oz pomegranate seeds, or yield of one pomegranate

1 medium butternut squash

8 oz pecans

¼ cup olive oil

2 tbs maple syrup

Salt to taste

Directions

  1. Preheat oven to 425F

  2. Prep butternut squash by peeling, removing seeds, and cubing into bite-sized pieces

  3. Lightly toss in half of olive oil and salt

  4. Roast on baking sheet in oven for 40-45 minutes

  5. Toast pecans in a skillet coated with olive oil over medium heat

  6. Add maple syrup and a pinch of salt and stir for 1-2 minutes to allow the pecans to become evenly coated

  7. Allow to cool in a single layer on parchment paper

  8. Toss greens, goat cheese, pomegranate seeds, squash, and candied pecans together
