Chicken & Veggie Curry

If you’re in need of something new and different, try this Chicken & Veggie Curry. It’s full of flavor and fresh veggies to fill growing tummies with the nourishment their bodies need.

Ingredients

2 lb chicken breast, cubed

2 cup chopped cauliflower

2 cup chopped zucchini

2 cup chopped carrots

½ cup chopped yellow onion

13.5 oz can full fat coconut milk

½ cup low-sodium veggie broth

6 oz can tomato paste

2 tsp fresh ginger

1 tbs yellow curry powder

1 tsp minced garlic

2 tsp salt

Optional – fresh cilantro for topping

Directions

  1. Mix all ingredients in crockpot

  2. Cook for four hours on high
