Maple Cinnamon Pumpkin Seeds

Carving pumpkins for Halloween? Don’t get rid of the seeds! Pumpkin seeds are loaded with healthy fats and make for a great snack. Try this recipe for Maple Cinnamon Pumpkin Seeds that’s perfect for those slimy seeds that are so fun to get your hands on.

Ingredients

2 cup pumpkin seeds

2 tsp sea salt

1 Tbs coconut oil

1 Tbs pure maple syrup

1/2 tsp cinnamon

Directions

  1. Preheat oven to 375F

  2. Boil seeds with half of the sea salt for 10 minutes, cleaning off any pumpkin residue

  3. Drain and pat the seeds dry and toss them in coconut oil, maple syrup, cinnamon, and remaining sea salt

  4. Bake on a baking sheet lined with parchment paper for about 20 minutes
