Quinoa Taco Bowls

Ingredients
1 cup quinoa
2 cups water
1 lb lean ground turkey
1 Tbs chili powder
1/2 tsp salt
1 Tbs cumin
1 tsp garlic powder
8 oz black beans
1 red pepper, sliced
1 orange pepper, sliced
1/2 cup red onion, sliced
1 Tbs olive oil
Pico de gallo
2 large tomatoes, diced
1/2 cup red onion, diced
1/4 cup cilantro, chopped
1 tsp minced garlic
1/2 lime, juiced
Directions
Bring quinoa and water to a boil in medium pot
Reduce heat to low, cover and cook for 15 minutes
Brown ground turkey with seasonings over medium heat
Add oil to a small saucepan and saute beans, peppers and onion until tender for fajita-style veggies
Combine tomatoes, onion, cilantro and garlic, and stir
Add juice of half a lime
Assemble taco bowls by adding quinoa, ground turkey, black beans, fajita veggies and pico
