UnBEETable Hummus

This recipe for UnBEETable Hummus was provided by our partner, Bertrand Weber, at Minneapolis Public Schools which has received more than $600,000 in grant funding to remove the Harmful 7. Our grant supports equipment for the central kitchen to prepare fresh produce, clean dressings, healthy proteins, soups and salad.s Breakfast carts and produce stands support food-access efforts and increase participation. The district has 76 sites, making a difference for more than 35,000 students in Minnesota.

Ingredients

1 large beet, cubed

2 cans garbanzo beans

5 Tbsp olive oil

1 lemon, juiced

1 Tbsp minced garlic

2 tsp cumin

1/2 tsp salt

Directions

  1. Steam beet until tender

  2. Drain and rinse garbanzo beans

  3. Combine all ingredients in a food processor or blender and blend until a smooth and even consistency forms

Notes

Try roasting the cubed beet with a small amount of olive oil before adding it to the UnBEETable Hummus for a richer flavor and brighter color.
