Quinoa Sweet Potato Salad

Need a Meatless Monday Meal, a meal-prep friendly dish or a new fun and creative side for a weeknight dinner? This Quinoa Sweet Potato Salad is full of whole grains, vitamin rich sweet potatoes and high-protein feta cheese. Whip up this salad, and you and your family can enjoy it all week long.

Ingredients

3 large sweet potatoes

1 cup quinoa, cooked according to package

1 cup dried cranberries

6 oz feta cheese

8 oz pecans

2 tbs olive oil

2 tbs maple syrup

1 tsp salt

Directions

  1. Preheat oven to 425F

  2. Peel and dice sweet potatoes

  3. Lightly toss in olive oil and salt

  4. Place on a baking sheet in a single layer and bake for 40-45 minutes

  5. In a medium skillet, coat with olive oil over medium heat

  6. Add pecans and a pinch of salt and stir until lightly toasted

  7. Add maple syrup and mix until pecans are coated, about 2-3 minutes

  8. Remove from pan and cool on parchment paper in a single layer

  9. Toss ingredients together
